These sliced confit duck gizzards (gésiers de canard confits) are cooked in duck fat until tender. These preserved duck gizzards in duck fat provide both convenience and an authentic taste straight from Southwest France. These gourmet duck gizzards are ready to eat and full of rich, savoury flavour, making them a great addition to warm salads, pies, or a savoury tart. Preparation Instructions: Place the opened can in a bain-marie (hot water bath) and slowly heat until the duck fat is completely liquid. Remove the gizzards from the jar and brown them in a hot pan with a spoonful of the melted duck fat for a few minutes until lightly crispy on the outside. To serve warm or at room temperature, add them into a green salad with walnuts and a mustard vinaigrette for a classic salade de gésiers. Before opening, keep in a cool, dry location.
